Spiced Hot Chocolate Recipe:
Who likes the winter anyway? Holidays.. and Christmas music.. and time off.. and family all around = LOVE. Every second of that.. however, winter itself… not so much.
One day there’s beautiful red, yellow, green and orange leaves flooding sidewalks and yards. It’s less sweaty and sticky, there’s a perfect breeze, and I only have to sleep with a light blanket. Ah, yes.
And then, all of a sudden… I wake up in the wee hours of the morning feeling like ice. I look out my window, and it’s like a dead abyss of white nothingness. I realize I can’t go anywhere with my rear wheel drive mini car that does pirouettes in the middle of the road, nearly taking everyone down with me… and I think:
“Get me out of here… take me back to California”, as my California friends prance around in 73 degree non-sweater-weather on snapchat. Me over here = jealous. For real.
And then I realize … I AM moving back to California. In three weeks. Yep. Moving = the worst. California with my family again = the best. Loving this decision.
There is a unique beauty to this winter wonderland; I’ll never forget it. But I’m a California girl… through and through, and I am very excited to get back…
It’s already so so cold here in Utah, so until I move… and when I don’t got my love to keep me warm… I cozy up with this healthier hot chocolate recipe – cuz’ it’s spiced, hearty and it’s made with lots-uh-goodness! This is a comfort beverage: at it’s finest.
I really love using coconut milk for this one – but organic whole cows milk makes a fine substitution. I believe in organic whole cows milk as a clean eating option – but, for me.. my stomach just can’t handle a lot of dairy. So I’ve fallen in love with coconut milk.
Why not non-fat milk or low-fat milk? Because they are more heavily processed to compensate for the fat and nutrients that have been removed.. AND these products are more confusing for your body to digest. So if you’re worried about “fat” and “calories” – drink real milk and drink it in smaller quantities.
If you are looking for a lighter coconut milk – I enjoy using the Thai Kitchen brand. Of all the options available at my local supermarket – The Thai Kitchen brand contains the fewest ingredients – and technically they are all “natural”. Just coconut, water and guar gum – which is a natural thickener. If you’d like the technical definition: guar gum is the ground endosperm of the guar bean.
Okay, back to this delicious beverage: I used coconut sugar to sweeten it. Cuz’ I love it. Can you you tell how much I like coconut products? I’m all about the healthy fats in coconuts, and the nutrients they provide. Wan’t to read a little about coconut nutrients? I included a little bitty on my green smoothie post last week. Check it out here!
In conclusion: If your winters are as cold, icy, and as long as the winters in Utah have been for me – try this hot chocolate.
Again, comfort beverage at it’s finest!
