Paleo Breakfast Muffins:
My husband has been getting back into his paleo regime, so I’ll likely feature quite a few Paleo related recipes on the blog.
This recipe is inspired from a crossfit website – I am terrible, and I forgot to write down which one… I like to give credit where credit is due, but for the life of me I can’t find the website where I got this from. So if this is your recipe, thank you!
I used to make it for my husband all the time when he was going to crossfit and was eating 100% paleo. Now that he is getting back into it, I brought these paleo breakfast muffins back this morning 🙂
These muffins are very easy to make, and they are so flavorful and juicy. They’re baked with tomatoes and avocado, but you can get fancy and add grilled onions or mushrooms too. You can also try them scrambled!
I like to bake mine for about 18 minutes at 350 degrees; it leaves the egg runny… but you can bake yours up to twenty minutes if you prefer a more firm yoke.
Each person may eat about two muffins, but if you are strictly paleo and eat as much as my husband does, you may want 6 to yourself for breakfast (or even more).
Also makes a delicious snack or lunch. Serve hot and eat with your favorite hot sauce if you like a little spice. We prefer Tapatio.
Next I’ll have to try these with bacon, but for now we used honey ham.

- 6 Eggs
- 6 Slices Uncured Honey Ham
- 1 small tomato
- 1 avocado
- Preheat oven to 350 degrees F.
- Use ham slices as muffin liners and place in a muffin tin
- place 2-3 chunks of tomato and 1 slice of avocado inside of ham slices, and add 1 egg on top of each
- season with salt, pepper, and paprika
- bake for 17-minutes
- remove with a spoon (as muffins will be hot!) and enjoy your paleo breakfast muffins!
