Healthy No-Bake Cookies | Chocolate Coconut:
What do you do when your nanny has plans on a Friday night? Make these delicious, fast, and easy cookies…. and then take a photoshoot. Pair with fresh strawberries and make it a romantic date night 😉 Who doesn’t love chocolate and strawberries on a Friday night?
My husband and I literally haven’t been to the movies in months. But tonight we actually had a lot of fun with this little project! It felt more like a date night than any sort of work, because the cookies only took ten minutes to make (if that). Plus we have really been enjoying getting into photography, and it’s always fun when you’re subject is a tasty treat.
The coconut flavor is delicious, and coconut oil provides a healthy alternative to butter in this recipe. There’s also the option to make these cookies gluten free by choosing a gluten free oat ingredient.
I recommend serving these cookies warm. After they cool, you can place them in the microwave for about 15 seconds before serving.
Enjoy these cookies for a date night, or a cheat day, and don’t feel any guilt. It’s made with clean and healthy ingredients… plus it’s worth the calories anyway!

- ½ cup Almond Butter
- 2 heaped tablespoon Coconut Oil
- ¼ cup Raw Honey
- 2 teaspoon Vanilla Extract
- 2 cup Old Fashioned Oats
- ½ cup Shredded Unsweetened Coconut
- 6 tablespoon Coco Powder
- 4 pinch Cinnamon
- Heat almond butter, coconut oil and honey in a saucepan over low-medium heat until almond butter is soft and honey and coconut oil are melted
- Add remaining ingredients and stir
- Drop spoonfuls of cookie dough onto a plate until dough solidifies. Serve warm 🙂
