Almond Butter | Coconut
Hey, I’m Erin… and I’m an aspiring blogger. I’ve been learning to cook for some time now, and I’ve been wanting to start a blog for some time now too.
I’m also hoping this blog will become a special keepsake for my family: a host for all of our favorite recipes and memories in the kitchen 🙂
For my first post, I want to share the recipe that started my family. It’s super easy, super fast, super delicious, and super healthy. My husband basically convinced me to marry him with this recipe…
When we were dating my husband was on the paleo diet and had a rock hard six pack. This recipe was a part of his paleo regime, and he shared it with me to save me from the spoonfuls of peanut butter I’d consume.
So here it is… I owe my marriage, my family, and my blog to this recipe.. its that good!
Use it with your favorite fruit (I prefer apples and bananas), on sandwiches, or as a cooking ingredient!
Enjoy your fresh Almond Butter!
- 4 cup Almonds
- 1 tablespoon Coconut Oil
- Place almonds and coconut oil in food processor
- Blend until smooth (10-15 minutes)
- OPTIONAL: Make it chunky! - After almond butter is blended, add a handful of almonds to the food processor and pulse until almonds are chopped to bits.
