This recipe is my jam! It’s painless and easy, it makes a great on-the-go breakfast, and it’s perfect to make ahead for road trips when I know healthy options are far and few between. Plus I’m pregnant, and I just want to eat chocolate and muffins all day every day. It’s perfect.

Around the Bend
I’ll have two rugrats to care for real soon. I’ve made it to about 30 weeks in my pregnancy, and I’ve decided that some stay-at-home momtrepreuners are better at managing their time (or at hiring nannies). I love being home with my babies though, and I feel so blessed that I have the opportunity to do so!
Doesn’t leave much time for blogging though… plus I’ve taken on a larger role in helping to grow our real estate investing business. So if in the near future my posts are far and few between, it’s because I’m wearing too many hats.
Cheers to life and here’s to figuring out how to focus on one business endeavor! In the meantime… Kitchen Of Eatin‘ is my happy place, and I’ll be back as often as nap time permits!

Chocolate Protein Muffins
- Preheat oven to 350.
- Place banana, eggs, soaked chia seeds, oats, buckwheat flour, honey, almond butter, and baking soda in food processor. Blend until smooth.
- Add ¾ cup chocolate chips and pulse food processor until chocolate chips are well combined within the mixture.
- Fill muffin tin with muffin batter (about ¾ full in each cup). Bake for 12-15 minutes, or until an inserted toothpick comes out clean.
- Serve warm and lather with some coconut butter, ghee, or honey (if you wana!).
